Long weekend!

Well, it was a long weekend!  Saturday was bing day and I really didn't do much...I had the bread pudding for breakfast that I saved from dinner at Town.  I also had some green tea frappucino and a croissant.  I felt like eating a slice of pizza...but wasn't hungry so I skipped it.  for lunch and dinner, I had spinach and ricotta ravioli from Costco - I had it with truffle oil, olive oil and sea salt.  Dessert?  I had the mini cupcakes from last week's binge day leftover...2 mini cupcakes...I really didn't miss them...they tasted ok, but nothing I couldn't live without.  That was my binge day...I didn't even have any drinks - just some red wine.  Sunday, went back to the diet - no problem at all.  Spinach, eggs...a little salsa.  Left over steak from Town...brussels sprouts and mushrooms.  Sunday, had dinner at friends' - had venison and salad - all within diet.  I don't recall exactly when I ate what but yesterday, more of the same - eggs, salsa, nuts...This is such an easy diet :)

Day 5!

Ok, so this is day 5...still not sick of this diet nor am I craving sweets or breads or pastas or cheeses...which is so amazing!  Not hungry yet so kicking off the day with 2 shots of espresso and unsweetened coconut milk.  I'll probably have leftover spinach-egg scramble with the usual sidekicks of veggies and black beans and guac.

So here it is 2:47pm - I'm having lunch...which is the same thing I had for breakfast...spinach-egg scramble, black beans and guac. - surprise surprise!! :D  I had 1 cup of coffee in between and 1/4 cup of mixed nuts for snacking.  Still not tired of the meals - actually loving the convenience too!!

Stay tuned for more :)

Ok, so lunch was just as I said before, last night's leftovers :)  Dinner - I'm really not hungry so I think I'll just pass - I'm still full from lunch!

Day 3!

Wow - love this diet!!  This morning I had another portion of the eggs with spinach along with some beans, salsa and guacamole.  Lunch, the same thing.  Snacks - 1/4 cup of mixed nuts mid-day, 1/4 of cottage cheese.  Dinner - made some more of the chicken thighs, brussels and broccoli...I can get used to this!!  I actually like it because it's not only easy but tasty and I don't crave anything else!  I think this is probably the best diet ever - I look forward to my cheat day on Saturday, but not jonesing for it like I thought I'd be... :)

Day 1 and 2!

Its 2011 and here I go with my New Year's Resolution #40+/- (I'm guessing that I started participating in this annual resolution thing at age of 10 +/-)
My husband got the 4 Hour Body book, which includes a super simple yet said to be highly successful diet.  Basically cut out all things white or what could be white, all things dairy except eggs, clarified butter, and cottage cheese.  You have to eat from 3 groups - vegetables, legumes and meats.  Pretty simple really.

I made for dinner last night, my official start of this diet, chicken thighs seasoned with "Montreal Steak" rub - found at Costco by the way.  Then, I browned the thighs in olive oil and clarified butter.  After both sides were browned, I added this sugarless fire roasted red salsa, also found at Costco.  It was kink of like a chili verde, with a lot more kick!  It was very tasty.  I also sauteed some brussels sprouts in clarified butter and salt, and same thing for broccoli.  Finally, I opened up a can of black beans and simmered it and stirred it up until mushy.  I served the chicken, beans and veggies on a plate with some Wholly Guacomole(again thanks to Costco).  Wow, what a meal - it was quite balanced, satisfying and super tasty!!  I had no further cravings for anything the rest of the evening!

This morning, I made some more clarified butter, which is just melting it and skimming the solid white stuff off the surface.  I sauteed some spinach, added scrambled eggs, then served it with some of the left over black beans and brussels sprouts.  Voila! - delicious and very filling!  I have enough for lunch too - but should add some variety so I'll throw in some cottage cheese to the plate.

The diet makes sense, it basically gets rid of the breads, pastas, dairies, sugars...but adds a lot of flavors.  I like the fact that it's very simple - no need to measure, you just use your common sense judgement - if you don't have that, well, I'm sure there's an app for that :)  I'm not up to lunch yet, it's only 9am.

Before I forget, I want to mention regarding the spices listed in the book:
All found at Costco(01/02/2011, Redwood City, CA)

Garlic salt
Montreal Steak rub

Salsa without sugar: Del Real Foods, Fire Roasted Red Salsa

Wholly Guacomole

A bottle of Liberty School Cabernet and J Lohr Cabernet - I fully intend to abide by the 1 glass before bed :)

They do have Stevia there also, although I didn't require any since I already have some at home.

Macadamia oil and Sea salt with white truffles - could not find - I did go to Wholefoods as the book suggested but I didn't see it there neither.  For my last 2 meals, neither ingredients were missed.

I have loads of cheat foods available; I just hope they keep well until Saturday! :)  I did go through the fridge and throw out things that I knew would not survive already.

Ok, stay tuned for results etc...I do need to post a before picture...ewe...

ok...11:47am - snacking on 1/3 cup of mixed nuts...not craving lunch yet...so I'll wait until after my errands in town.

Ok, back from errands, (didn't leave until 2 ish by the way) - having my leftovers from last night - yummm!!!
