Its 2011 and here I go with my New Year's Resolution #40+/- (I'm guessing that I started participating in this annual resolution thing at age of 10 +/-)
My husband got the 4 Hour Body book, which includes a super simple yet said to be highly successful diet. Basically cut out all things white or what could be white, all things dairy except eggs, clarified butter, and cottage cheese. You have to eat from 3 groups - vegetables, legumes and meats. Pretty simple really.
I made for dinner last night, my official start of this diet, chicken thighs seasoned with "Montreal Steak" rub - found at Costco by the way. Then, I browned the thighs in olive oil and clarified butter. After both sides were browned, I added this sugarless fire roasted red salsa, also found at Costco. It was kink of like a chili verde, with a lot more kick! It was very tasty. I also sauteed some brussels sprouts in clarified butter and salt, and same thing for broccoli. Finally, I opened up a can of black beans and simmered it and stirred it up until mushy. I served the chicken, beans and veggies on a plate with some Wholly Guacomole(again thanks to Costco). Wow, what a meal - it was quite balanced, satisfying and super tasty!! I had no further cravings for anything the rest of the evening!
This morning, I made some more clarified butter, which is just melting it and skimming the solid white stuff off the surface. I sauteed some spinach, added scrambled eggs, then served it with some of the left over black beans and brussels sprouts. Voila! - delicious and very filling! I have enough for lunch too - but should add some variety so I'll throw in some cottage cheese to the plate.
The diet makes sense, it basically gets rid of the breads, pastas, dairies, sugars...but adds a lot of flavors. I like the fact that it's very simple - no need to measure, you just use your common sense judgement - if you don't have that, well, I'm sure there's an app for that :) I'm not up to lunch yet, it's only 9am.

They do have Stevia there also, although I didn't require any since I already have some at home.
Macadamia oil and Sea salt with white truffles - could not find - I did go to Wholefoods as the book suggested but I didn't see it there neither. For my last 2 meals, neither ingredients were missed.
I have loads of cheat foods available; I just hope they keep well until Saturday! :) I did go through the fridge and throw out things that I knew would not survive already.

ok...11:47am - snacking on 1/3 cup of mixed nuts...not craving lunch yet...so I'll wait until after my errands in town.
Ok, back from errands, (didn't leave until 2 ish by the way) - having my leftovers from last night - yummm!!!
